  • 1 (12 ounce) package penne pasta
  • 2 tablespoons olive oil, divided

  • 2 tablespoons minced garlic
  • 1 (14.5 ounce) can diced tomatoes
  • 1 bunch fresh spinach, rinsed and torn into bite-size pieces
How you’ll make it:
  1. Start by bringing a large pot of water to a boil. Once the water is boiling, add the penne pasta and cook to your preferred tenderness (usually around 8 to 10 minutes).
  2. Heat 1 tablespoon of olive oil in a large skillet on medium heat. Put bacon into the skillet, cooking until brown and crispy.

How you’ll make it:
  1. Preheat your oven to 375 degrees F.
  2. In a large mixing bowl, combine the flour, ¾ cup cocoa powder, sugar, baking soda, baking powder, and salt.
  3. Once stirred together, create a well in the center of the dry ingredients and pour in eggs, coffee, buttermilk, and oil. Stir together until just blended.
  4. Crumble cooked bacon and mix in ¾ of the bacon, reserving the rest for an ending garnish.
  5. Spoon batter into prepared cupcake pan.
