A flat iron steak comes from the top blade and is full of intense flavor due to its incredible marbling. It's one of the most tender cuts of beef, maybe only second to filet mignon. Perfect to grill or best to pan-sear, medium-rare.

A quick tip: Due to the thin nature of the cut, you'll want this steak to stay cool (not room temperature) before introducing your heat. It will help to prevent overcooking your steak.
