Pork sirloin is a nice little roast that is lean and tender. You can think of its preparation like a beef tri-tip - Season, marinate and cook it hot and quick. The versatile pork sirloin can also be cubed for kabobs or stew or can be cut to stir-fry for a quick meal.
Like any lean cut, it is important to not overcook it or it will render the internal fat and become dry. We like to smoke or grill a pork sirloin to 135-8F and let it rest to about 145F. The pork sirloin is great for leftovers.
