Boneless pork chops come 2 chops per package and are the most popular cut from the pork loin.
Depending on the area of the loin the pork chop comes from, the chops can be either marbled like a boneless ribeye of pork from the head of the loin or leaner like a new york steak as they run towards the hip.
A perfect quick meal. Pork chops can be seasoned and cooked to an internal temp of 140 F and rested to the USDA recommended temp of 145 F.
(Note: I like to brine or simply season and then cook or smoke at a low temp to an internal temp of 135 F and let them rest for 8 min)
