We've had requests for some offal on our site and we are all about it. Not only does it align with our whole-animal philosophy, it also aligns with our nutrient-dense mentality. According to the USDA, it's packed with protein, rich in folate, iron, zinc, and selenium. It's also rich in B-complex vitamins (B2, B6 and B12), which helps reduce cholesterol and blood pressure. High in protein and low in fat.

Our butchers have perfectly sliced this for you so it's ready to cook. We suggest grilling it quickly to a medium-rare. Let it rest, slice it thin, and add your favorite steak sauce to it (maybe a chimichurri or balsamic reduction). Or braise it low and slow over several hours. It's also great in a stew or stir fry. It's best cooked hot and fast or low and slow. With the heart being a muscle, it isn't as gamey as other offal. It's a delicious and underrated cut.
