The tri tip is a triangular cut from the bottom tip of the sirloin. It's a lean cut of meat that's nicely marbled and tender. It has a rich, beefy flavor yet lower in fat compared to other cuts. 

The leftovers make great tri tip tacos, sandwiches or chili!

Cooking tip: You always want to sear your tri-tip on high heat first, then cook until medium rare, about 140 degrees. Make sure to let it rest at least 5 minutes before slicing to maintain all the juices on the steak.
