Pork sirloin is a nice little roast that is lean and tender and you can think of its preparation like a tri tip that from beef. Like a tri tip on beef, you can season, marinate and cook it hot and quickly or slow. The versatile pork sirloin can also be cubed for kabobs or stew or can be cut to stir-fry for a quick meal.
Like any lean cut, it is important to not overcook it or it will render the internal fat and become dry. We like to smoke or grill a pork sirloin to 135-8F and let it rest to about 145F. The pork sirloin is great for left overs.
